If you have been a vegan for quite some time, then you can enjoy a memorable Valentine’s Day with your significant other by preparing a delicious meal for them.

You may also decide that one of your New Year’s resolutions is to become a healthier and happier person by becoming a vegan. Becoming a vegan does not mean that you have to skip Valentine’s Day. Below are some Valentine’s Day dishes for vegans that you can enjoy.

Apple Oat Pancakes

Apple oat pancakes serve as a tasty treat for Valentine’s Day. Enjoy lovely seasonal flavours and sweet and fresh apples. To make your apple oat pancakes, you will need some oat flour, six ounces of chopped and peeled apples, baking powder, and water.

Optional ingredients include spices, vanilla extract, and maple syrup. Once you have measured your ingredients, you should toss them into your blender. Blend for about fifteen seconds. Allow the batter to sit for fifteen minutes so that your pancakes will be nice and fluffy.

You won’t need any oil to make your pancakes if you have a non-stick pan. However, you will need to add a teaspoon of oil on medium heat if you don’t have a non-stick pancake pan.

Proceed to cook your pancakes on each side. Once golden brown, allow them to cool for a few minutes.

Next, add your toppings to your pancakes. Add apples to seal the deal, and you can also add some maple syrup, vanilla extract, and spices, such as cinnamon if you want some added flavour.

Heart-Shaped Strawberry Pop-Tarts

To make the strawberry jam, you will need a tablespoon of heavy cream, a pound of fresh chopped strawberries, a sheet of puff pastry (thawed), two tablespoons of lemon juice, one and a half cups of sugar, and half a teaspoon of lemon zest.

To make the glaze, you will need half a teaspoon of vanilla extract, one to two teaspoons of cream, and a cup of powdered sugar. A heart-shaped cookie cutter and red sprinkles serve as optional utensils/ingredients.

To make your jam, you will need a saucepot. Place it over medium heat, and then add your lemon juice, sugar, strawberries, and lemon zest. Stir everything together. Once the amalgam has come to a boil, the mix should be left to simmer for fifteen minutes.

Stir frequently so that your mixture does not burn. Once it has sufficiently thickened, you should allow the jam to cool down.

Next, preheat your oven to 350 degrees Fahrenheit. Take some parchment paper and line it over a sheet tray. Proceed to roll out the thawed puff pastry on a surface roll that has been adequately floured.

A heart-shaped cookie cutter can be used to cut several hearts. Proceed to place them on your sheet tray.

Add a small amount of your strawberry jam to the centre of each heart. Place another heart over the jam, and then brush some cream over the top. Bake the hearts in your preheated oven for fifteen minutes or until golden brown.

Allow your strawberry pop-tarts to cool for a bit while you prepare the glaze. Toss your powdered sugar into your bowl alongside your vanilla extract and a teaspoon of cream.

Drizzle your glaze over your pop-tarts. Add as little or as much as you like. Red sprinkles can be added if you want to add just a bit of romance for Valentine’s Day.

Red Velvet Waffles

To make your red velvet waffles, you will need some red food colouring, two eggs, two cups of flour, half a teaspoon of vinegar, two teaspoons of vanilla extract, three tablespoons of sugar,  four teaspoons of baking powder, a tablespoon of cacao powder, a third of a cup of melted and cooled butter, and one and three-quarters of a cup of buttermilk.

Begin by greasing your waffle iron. Preheat according to the provided instructions. Whisk your salt, baking, cacao powder, sugar, and flour in a bowl. Once done, place to the side.

Next, use a whisk to beat together your eggs, vinegar, butter, vanilla, and buttermilk in a second bowl. Add some red food colouring to the mixture. The colour should be darker than the desired shade, as the colour will begin to lighten as you start to cook.

Next, add your wet mix to your dry mix. Ensure to fold so that everything is mixed together evenly. Proceed to cook your waffles according to the size of your waffle iron and the provided instructions.

Generally speaking, you will know when your waffles are cooked when they have ceased steaming. You can serve them with some cream cheese or whipped cream frosting if you wish.

Carrot Hot Dogs

To make your carrot hot dogs, you will need some mustard and ketchup for serving.

You will also need eight hot dog buns, two tablespoons of soy sauce, half a teaspoon of liquid smoke, half a teaspoon of smoked paprika, half a teaspoon of garlic powder, a quarter cup of apple cider vinegar, a teaspoon of maple syrup, a quarter cup of vegetable broth, two teaspoons of extra virgin olive oil, and eight peeled carrots that have had their slim ends trimmed.

Throw your carrots into a roasting pan and proceed to toss them in some olive oil. Whisk your liquid smoke, garlic powder, vinegar, paprika, soy sauce, maple sauce, and broth in a bowl.

Pour the mixture over your carrots and use some foil to cover your pan. Allow the mixture to sit for half an hour. Next, preheat your oven to 425 degrees Fahrenheit. You will then need to place your baking dish in your oven.

Allow your carrots to roast inside the oven for half an hour. Then, extract the foil and continue to roast the carrots for an additional twenty minutes. Once you can stab the carrots with a fork, you will know that they have been sufficiently tenderised.

At this point, all that is left to do is place the carrots in your hot dog buns and add some mustard and ketchup before you serve them to your significant other.

Vegan Creamy Spicy Sun-Dried Tomato Pasta

You will need a cup of parmesan cheese that has been freshly grated.

You will also need a pound of penne pasta, a tablespoon of olive oil, a cup of freshly chopped basil leaves, a cup of whipping cream, half a teaspoon of crushed and dried red pepper, four large and finely chopped garlic cloves, a cup of oil-packed, drained, and chopped sun-dried tomatoes, and a 7.25-ounce jar of chopped, drained, and roasted red peppers.

Take a saucepan and heat your oil over medium heat. Add your garlic, and then saute it for a minute. Add your red peppers, tomatoes, crushed red pepper, and cream before you simmer for two minutes over medium heat.

Stir in your half a cup of basil and then simmer for an additional minute. Proceed to cook your pasta in a pot of boiling salted water. The pasta should be firm but tender. Stir your pasta occasionally.

Drain the pasta while retaining three-quarters of the pasta cooking liquid. Take your pasta and place it back in your pot. Add half a cup of basil, cheese, and sauce, then toss everything together to coat.

The reserved cooking liquid can be added to your pasta to add some moisture if it is dry. Finally, add some pepper and salt for seasoning before serving it to your loved one.
